RECIPE: Salsa Salad



Ingredients:

  • 420g can red kidney beans, drained and rinsed
  • 420g can corn kernels, drained and rinsed
  • 1 medium tomato, finely diced
  • 1 medium green capsicum, finely diced
  • 1 small red onion, finely diced
  • 1 teaspoon ground cumin
  • 1 tablespoon chopped fresh coriander
  • 2 tablespoons lime juice

Method:

  1. Place all ingredients in a a bowel and mix together. Serve chilled.
